Beef Cutting Instructions

The round on a 1/2 beef typically weighs 15-25 lbs. If you are wanting a specialty item such as jerky or dried beef you will not be able to choose any other options unless you have a Whole Beef. Choose 1-2 options on anything less than a whole beef!

Steaks

With a Whole beef you may choose 1 or 2 options of steak cut per category (short loin/rib). If you are purchasing a 1/2 or 1/4 of beef you only get 1 option!

You may upgrade and get any of the above steaks for an additional flat fee of $20.00.

Please note that by choosing Chuck &/or Flat Iron Steaks this will eliminate or decrease your Chuck Roasts.

Brisket

Each 1/2 of a beef has a whole brisket that can be cut down into 2 Chunks. If you are getting a 1/4 of beef you will be given your share of the brisket in 1 chunk (choose whole).

Hamburger is an average of 85% lean. We strive to make it as close to this as possible but, please note that this ultimately depends on the beef being processed.

Patties have a minimum requirement and are an additional charge. 

You may have your ground beef vacuum sealed if desired. This is an additional fee. Please note this in the comment / special request section at the bottom of the page.

Bones

Heart, tongue, & oxtail are not split when splitting a beef & will only be given to 1 person with request.

SPECIALTY PRODUCTS ARE AVAILABLE AT AN EXTRA CHARGE & 25 LB. MINIMUM BATCH REQUIREMENTS PER FLAVOR!!!

All specialty items are packaged standard. Please see the Specialty Products page for flavors and more options.

Please note that Whole Muscle Jerky & Dried Beef are both made from the Round. You will not be able to choose other options (such as stew meat or steaks) if you are wanting 1 of these options & you will only be able to choose more than 1 option from the round (including specialty products) if you have a whole beef.
